Last Friday ten of us learnt from retired Women’s Day Food Director, Jennene Plummer, how to create four meals when cooking for one person.
We held the cooking lesson and the lunch that followed at our Monday Club/DCM boardroom on the waterfront in East Balmain.
The weather was perfect, the food was delicious, the wine was excellent, and the company was also excellent.

Everybody was extremely impressed with Jennene’s simple ideas on how to utilise the leftover meat from one roast chicken. She created these four meals for one:
- Hearty chicken and corn soup
- Thai chicken salad
- Chicken pocket pie
- Chicken and mushroom risotto
The number of ingredients in each was minimal and the recipes were designed to have little wastage.

We will be staging more cooking classes for one, as well as other lunch concepts, over the next four to six weeks. Keep an eye out for announcements in newsletters and the Monday Club notice board.
Thanks Jennene (who is a Monday Club member) for a fabulous afternoon!
